He made a lot of good points about how a restaurant REALLY runs by using simple diagrams in his own unique handwriting, giving the general public an idea of the not so simple life of a restaurant worker. Watching him go down in the beginning was heartbreaking, but anyone who has ever been in that situation knew that he would find his zone eventually and get into the rhythm of the rest of the brigade (That's old school talk for the line. Thank Escoffier for that.). The best was when he took his break and went to the local pub. Did you see the vulnerable look on his face? And hear the fear in his voice? And of course, any hardcore chef or line cook could understand the change in his attitude reentering the brasserie, and pulling it off. When it comes down to it, Tony has aged. A lot. Especially in the last eight years as you could see in comparison on the show. And I admire him for finding an intelligent way to retire (No Reservations), living a life of travel and exploration and getting paid more than he's ever made sweating, cutting and burning himself. Bravo Tony! And screw anyone calling this genius a sellout! May we all be fortunate enough to live the life of this legend! COOK FREE OR DIE!!! -

Thu, March 20, 2008 - 10:05 PMAgreed, this was a really enjoyable episode. I've watched it three times already. Great editing, fun music. Carlos's voice in the background of almost the entire episode, just like being on the line.
