Argentina episode

That was a wacky episode.

The mega-beef BBQ fest looked amazing, until Tony said all the beef was getting overcooked, by his standards. Interestingly, Tony grabbed some raw steak cuts for himself and grilled them to his own liking. Of course, nothing beats super fresh beef being expertly grilled over an open fire to a perfect medium rare. But, why didn't Tony eat the beef the way everyone else there was having it served? What happened to "eat like the locals"?? I'm thinking, if Tony can cook his own share of beef his way while visiting an Argentinian festival, then why not have his ostrich egg dirt omelet in Namibia, or even the wild boar sphincter, cooked to his preference???

The scenes with the gauchoes was sort of funny, but a bit longer than necessary. What a bunch of drunk asses!!

This episode was filled with all kinds of characters. The aging rock band, the quirky artist who makes and destroys sculptures of food, and then those two crazy gauchoes he dragged up the glaciers.

Finally, I'm not sure why seeing glaciers up close this time made Tony ponder his own mortality. He's already written before that these travels are already the gravy of his life, after years of drugs and struggles in various kitchens.

Just wondering what others thought of this episode.

I considered going but am hesitant because of the high ticket costs.

There have been a wide range of reports over the past few days that Anthony Bourdain has been in San Francisco with his film crew visiting various eateries, including Sebo Sushi and Incanto, as well as visiting the Saturday morning Farmers Market at the Ferry Building.

Did anyone here see him first hand?

HELP ! My VHS with the "French Laundry " episode just got mangled before I could transfer it to DVD - E-mailed Michael Ruhlman this morning and he said look for reruns - I DON'T WANNA WAIT !

Despite the URL from a prior Tribe thread, I can't find an active torrent for season 1 (there is a 3GB one of all 22 episodes of season 1 - but NoGo on getting it !)

Any thoughts or help on how to get a copy would be greatly appreciated - Season 1 was Tony at his acerbic best on several episodes "callin 'em as he sees 'em".

I finally had the chance to catch up watching the Greek Islands episodes.

One of the better episodes - lots of food and eating, plenty of hard liquor consumption, the slaughter of a live lamb, and a surprisingly graphic scene of a pheasant pulverized by Tony's shotgun with the bird ultimately left behind and unused for the meal. Definitely not an episode for PETA or Pamela Anderson -- good thing they're preoccupied with cattle video footage these days.

By Sean O'Neal
January 9th, 2008
"Within the last decade, the idea of the "celebrity chef" has shifted away from the Paul Prudhommes and Julia Childs of the world. Rachael Ray and Martha Stewart aside, foodie culture these days is more or less ruled by a group of no-nonsense "bad boys" with attitude to match their considerable skill. The popularity of tough-talking, proudly egomaniacal iconoclasts like Rocco DiSpirito and Gordon Ramsay has as much to do with their refusal to mince words as their ability to mince garlic. Some of the credit (or blame) for that seismic shift must be laid at the feet of Anthony Bourdain, the former renowned executive chef of Manhattan's Brasserie Les Halles. He became a cult celebrity nearly overnight after publishing his hilarious, scathing autobiography, Kitchen Confidential: Adventures In The Culinary Underbelly. Since then, Bourdain has become one of the most visible chefs in the world, thanks to appearances on shows like Top Chef, as well as his own Travel Channel series, No Reservations, on which he seeks out unique experiences, culinary and otherwise, on the darkest corners of the map. The A.V. Club recently caught up with Bourdain during some increasingly rare downtime to talk about his whirlwind career, his heroin-addled days serving fine cuisine to New York's finest punk-rock bands, and whether he thinks the rise of the "celebrity chef" has had any real impact on the way people eat."

I've been a chef now for over ten years, and I just started to a webcomic called Obscene Cuisine to help with the "burnt out" feelings I have been having!
It can be found at
www.drunkduck.com/obscene_cuisine/
It is called Obscene cuisine for a reason,
and I would love you to have a paruse, esp. if you're a Bourdain fan like me!

Thanks,

If anyone is paying attention, the No Reservations book comes out on October 30th. I looks like Tony's doing a book tour during November and December. I feared as much but I lucked out, it's the DAY before I leave for Ireland that he's going to be in Santa Cruz. I can't believe my luck!

Anyway, these are the dates I've found so far...

November 16 - Santa Cruz, CA - Rio Theater

November 27 - Minneapolis, MN - Solera Restaurant

December 1 - Philadelphia, PA - Central Library

I'll add to this if I find out more dates.

Tony on Chef's Story....

WOW... today I watched Chef's Story for the first time... I was looking at the schedule for Create TV and saw that Tony was the featured chef... I was delighted! The host, Dorothy Hamilton, was very good at revealing Tony's many charming and interesting aspects... from the seedy sides of Kitchen Confidential to the seemingly theatrical nature of Chef Ramsay on Hells Kitchen, to the planning and challenges going into the third season of No Reservations.... the show concluded with Tony making duck confit.... he made it look easy and elegant...

Tony was hip and cool and self depricating as he showed genuine gratefulness saying he " .... has the best job in the world..."

Has anyone else seen this show? What were your impressions? Have you seen other Chef's Story episodes? Which were good?

January 2008 new season

During the Tuscany episode, Travel Channel ran a promo ad for Tony's next season. I don't remember the video imagery (somewhere in New Orleans), but I do remember them saying he goes to Singapore, Berlin, New Orleans, and one other city that escapes my memory at the moment.

I am very excited that he is finally doing a full hour episode on Singapore, since he repeatedly mentions how familiar he is with Singapore.

All coming in January 2008.

On the whole, the 2007 season was OK. We've discussed some obvious dud episodes, like Russia and Cleveland, and some great ones like the recent Hong Kong episode.

Let's hope the production valuess get even better for next season.

I couldn't help but laugh at the Italians making fun of Tony's first dinner, although I'm sure it was made out to be worse than it actually was. After all, it was Octavia (his wife) so I'm sure she's allowed to razz him a bit.

I did also love the bits of Dante's "Inferno" added in for effect although it still doesn't fit the view of Tuscany for me, it was an enjoyable deviation because I love "Inferno".

Overall, another decent episode, didn't love it but didn't completely hate it either.

Thoughts?

And this was the season finale so we will have to wait for January.

That has got to be one of his best episodes. Bouncing around Hong Kong eating and eating and eating!!! What a stark contrast from the Cleveland episode.

I even enjoyed the campy wire-fu scene, which did include the crew eating up a big bowl of food.

I haven't been to Hong Kong since 1994. My mouth was watering throughout the episode and I feel compelled to make a return trip.

Now THAT'S more like it! The magic is back!!!

Excellent, excellent episode. And the highlight was definitely the trip to Claudia's house. When she said, "I like it when people dream in my house" ... oh man, I soooo wanted to be there.

My absolute favorite moments in this show are when Tony gets philosophical and "deep". When he commented on his change of mood while at Claudia's, and how it made him reflect on the oneness of the world ... well, it just seemed so real and authentic. He may have a cantankerous side, and he may be too pent up to dance, but that Bourdain is a pretty wise chap.

I wasn't crazy about this one--too navel-gazing; not enough about food (in particular, I could have done without the gun-firing sequences). Some of the bits with the Bizarre Foods guy seemed forced (and Tony seemed bored), though I did enjoy the part with the Mexican food stands at the soccer field.

Not the most memorable episode to kick off the new season, but still 50 times more fun than most TV.

The trip seemed to lack that Bourdain "zip". I can recall at the end of Ireland and Vietnam when Tony's commentary definitely turned poetic and philosophical. I would have expected the same from a journey to the Himalayas, but I guess we don't pick what we're touched by, huh?

Food-wise, I think the highlight was definitely the soup buns. I've had dim sum a number of times, but nothing like the soup-filled concoctions Tony had in downtown Shanghai.

Next stop: New York

Great guest blog entry from Mr. Bourdain. He basically rips on Food Network, but spares Alton Brown (I love Alton!) and a few others including Mario Batali.

Was this a repeat? I know I've never seen it before, but Wiki lists it as originally airing in late May! It also lists two episodes from India, one from Korea, and one from Indonesia that I haven't seen. Did all of these really air back in May and June?! What the hell was I doing? And why didn't the trusty TiVo snag them??!!!!

Regardless ... excellent show! The commentary on the human side of border politics was outstanding. This, along with the immigration epiosde of 30 Days should be mandatory viewing in Congress, and in the Texas state legislature.

Pacific Northwest

As a Seattle resident I was looking forward to this episode with great anticipation. I have mixed feelings about it. Surprisingly, I enjoyed the segments on Portland more than those on Seattle overall. Perhaps this is because I'm burned out on what I'm familiar with (the Seattle foodie scene) and the Portland material felt fresher to me. Or maybe it's because there was no Chuck Palahniuk equivalent to show Tony around Seattle.

I appreciated Tony's reluctance to use familiar cliches for the Northwest, and his decision to settle on "obsession" as a way to sum up the area cracks me up, and I think it's right on target. I was a bit disappointed to see two tired old chestnuts of Seattle tourism--Pike Place Market fish-throwing and geoducks--addressed on the show. Sadly, one or both of these have been covered fairly recently by other food shows, like Mark DeCarlo's "Taste of America" on the Travel Channel, and two crappy new shows on the Food Network (the Deen Boys' "Road Tasted" and the new travel show/filler with Giada de Laurentis). I must acknowledge, however, that Tony addressed these subjects in new ways, like asking the fishmongers if they actually sold the fish they threw around, and digging up the geoducks on the muddy beach.

I have two bigger beefs with the Seattle segment: 1) too upscale, and 2) too white. Most of what Tony covered is out of the reach of your average Seattleite. In my 14 years in Seattle I've never had geoduck, nor have I seen it on a menu, and though I've read about the underground "Gypsy" house restaurant scene, when I looked into it I discovered that the price was way out of reach for anyone I know. Of course the show should explore both high and low in the food realm, so all of this would have been fine by me if the show had just spent a little time on the incredible cheap food one can get in Seattle. The bit about Piroshky Piroshky was spot on (a terrific place), but if they had filmed another minute or two of Tony walking further down that same block across from Pike Place Market, you would have seen all sorts of delicious ethnic foods to be had for a reasonable price. And that brings me to my second complaint. Where on earth was the Asian food in this episode? Chinese, Japanese, Vietnamese, and other Asian cuisine has had a huge influence on the Seattle food scene, but the closest we get to it in this episode is a white guy using shoyu on the geoduck on the beach. Nothing against that by any means, but c'mon! Any discussion of Seattle food without mention of the Asian influence is pretty puzzling.

Lastly, I wish there had been more of an explicit reference to the seasonal nature of Pacific Northwest cuisine. Given the morel mushrooms, fiddlehead ferns, asparagus, and Copper River salmon in the episode, it must have been filmed in the late spring. Pike Place Market is a fantastic place, but most Seattleties I know avoid the tourist throngs there (at least during the summer) and go to local neighborhood farmers' markets instead, where everything is local and highly seasonal (no California peaches there).

By the way, in case anyone is interested, these are the chefs that were featured in the "Gypsy restaurant" segment, from a local cooking school that I've heard very good things about: http://www.culinarycommunion.com/who.html

I got a kick out of the pop rocks, Boone's Farm, and epoisse "cheese whiz" in that segment. At least no one can say we don't have a sense of humor here in the gloomy Northwest.

Rewatched some episodes

I was sick at home yesterday and I ended up rewatching multiple episodes on my DVR:

both India episodes
Paris
Peru
Ireland

I ended up liking the India and Paris episodes a lot more with rewatching them. The Peru episode was OK (I seem to recall more "enlightenment" scenes while visiting Machu Picchu), and the Ireland episode is obviously still pretty fresh.

Tony seemed to really get into the adventure and the home cooked meals while in India.

The ceviche in Peru looked good, but the medicine man and farmer scenes were kind of depressing (although I appreciate the difficult socio-economic issues which surround the settings).

Paris was the first episode of No Reservations and I recall it was a good departure from the original Cooks Tour format from the Food Network. I didn't know at the time that Tony has the same production team as the original series. With the hour long format, Tony gets to show and say a lot more. He emphasized the importance of sensuality in everyday life in Paris, which is how such good food fits in.

I'm hoping future episodes will have Tony either having more personal epiphanies (Malaysia, Indonesia, Vietnam) or just really getting annoyed by the location (Iceland, Las Vegas).

Curious, just found this tribe (hello, world) and was wondering if any of you tribers out there has used any of the recipes in the nuevo bistro classic Les Halles. I have happily enjoyed several recipes so for. What are your experiences?

* I am planning to make this weekend:
Les Halles French Onion Soup
Frisée aux lardons
Rôti de Porc au Lait

Any wine pairings suggestions are very much welcomed. So far I am considering a Riesling to start and possible and nice bottle of local (Santa Barbara) Pinot Noir (or two).

recent recipes

Okay, boys and girls here are the Bourdain Les Halles recipes that I just made mere hours ago.

First Course:
Tomato Salad

2 lbs. heirloom tomatoes cored & cut into wedges
coarse sea salt & freshly ground black pepper
1 red onion
1 clove garlic
1/4 extra-olive oil
2 tbsp. balsamic vinegar
1 sprig basil

Prep:
Degorge the tomatoes by placing them, already cut into a colander and
sprinkling them with 1/2 tablespoon od sea salt and 1/2 tablespoon of black
pepper. Let sit for 30 minutes, then brush off and remove the seeds.
Place the sliced onion into a sperate colander and sprinkle with sea salt.
Letsit 30 minutes, then brush off the salt ans squeeze out any excess water.

Serve:
Prick the garlic with the fork and rub the clove inside the salad bowl. Add the
olive oil and the vinegar and whisk. Season with salt and a little pepper. Add
the tomatoes, the onion, and the basil leaves. Toss with the vinaigrette.
Arrange on plates and sprinkle a little fresh black pepper over the top.

Improvisation:
My Tante Jeanne made this dish differntly but deliciously. She used red wine
vinegar instead of the balsamic, sliced shallots instead of the red onion, and
sprinkle a mound of freshly chopped parsley over th topat the very end.

Personally, I prefer her version to our house model. You might try both and
pick your favorite.

*personal note:
I used both shallots & red onions and topped the whole migilla with parsley. My fav variation so far.

Second Course:
Les Halles Onion Soup

6 oz. butter
8 large onion thinly sliced
2 oz. port
2 oz. balsamic vinegar
2 quarts dark chicken stock
4 oz. slab bacon cut in 1/2 inch cubes
1 bouquet garni
salt and pepper
16 baguette croutons sliced and toasted in the oven with a little olive oil
12 oz. Gruyere cheese grated

Equipment:
large, heavy-bottomed pot
wooden spoonladle
8 ovenproof soup crocks
propane torch

Prepare the Broth:
In the large pot, heat the butter over medium heat until it is melted and begins
to brown. Add the onions and cook over medium heat, stirring occasionally,
until they are soft and browned (about 20 minutes). Onion soup, unsurprisingly, is all about the onions. Make damn sure the onions are nice,
dark, even brown color.
Increase the heat to medium high and stir in the port and the vinegar, scraping
all that brown goodness from the bottom of the pot into the liquid. Add the
chicken stock. Add the bacon and bouquet garni and bring to a boil.
Reduce to a simmer, season with salt and pepper, and cook for 45 minutes to
an hour, skimming any foam off the top with the ladle. Remove the bouquet
garni.

The Croutons and Cheese:
When the soup is finished cooking, ladle it into the individual crocks. Float two
croutons side by side on top of each. Spread a generous, even heaping
amount of cheese over the top of the soup. You want some extra to hang over
the edges, as the crispy, near-burnt stuff that sticks to the outer sides fo the
crocks once it comes out from under the heat is often the best part.
Place each crock under a preheated, rip-roaring broiler until the cheese melts,
bubbles, browns, and even scorches slightly in spots. The finished cheese
should be a panorama of molten brown hues ranging from golden brown to
dark brown to a few black spots where the cheese blistered and burned. Serve
immediately -- and carefully. You don't know pain until you've spilled one of
these things in your lap.

If your broiler is too small or too weak to pull this off, you can try it in a
preheated 425F/220C oven until melted. A nice optional move: Once the
mound of grated cheese starts to flatten out in the oven, remove each crock
and, with a propane torch, blast the cheese until you get the colors you want.

Personal Note: The first tine I made this soup I used my own dark chiken stock. This time I used the boxed stuff. To compensate for the color difference I threw in some tomato paste. System D in effect.

Main Couse:
Rôti de Porc au Lait

3 lbs. bonless pork loin roast
2 tbsp. olive oil
1 tbsp. butter
1 medium onion chopped
1 carrot finely chopped
1 garlic clove
1 tbsp. flour
2 cups whole milk
1 bouquet garni
1 leek finely chopped, white part only

Cook the Pork
Season the pork with salt and pepper. Heat the oil in the dutch oven. When the oil is hot, add the butter. Brown the roast on all sides, 6 to 7 minutes total. Remove the roast from the pan and set aside on the large plate. Add the onion, carrot, leek and garlic and stir over high heat until soft and caramelized, about 10 minutes, then add hte milk and the bouquet garni. Bring to a boil and cook over high heat for 5 minutes. Add the pork and any juices that have collected on the plate. Reduce the heat to a simmer. Cover and cok over low heat for 1 hour, making sure to periodically rotate the pork ( the sugars in the milk can cause sticking and scorching). Remove the pork and allow to rest for 15 minutes.

Finish the Sauce and Serve
Remove and discard the bouquet garni. Strain the cooking liquid into a small pot and bring to a boil. using a hand blender, puree the sauce until foamy. Adjust the seasoning as needed. Carve the pork and arrange on a serving platter. Spoon the sauce over and around and serve immediately.

Personal Note: super yummy but the sauce needed a little something, something. Perhaps some demi-glace? Probably wouldn't have hurt.

My picks would be:
- Nepal
- South Africa
and
- Colorado (gotta pick the home state)

Ciao!

Les Halles

I just had lunch at Les Halles, the Park Ave location, mostly just to be able to say I ate there!

They had an $18 brunch special with a choice of starter, entree, and dessert. I went with the field greens salad, the steak frites, and the sorbet.

The steak for pretty lackluster, appearing dry and served medium well despite my medium rare order. The fries were pretty good, most were crunchy, but some pieces were suspiciously chewy too. The sorbet was actually excellent. The three flavors were all sweet and not too tangy.

Service was good - the restaurant was barely 1/5 full. My $2.50 ice tea was promptly refilled multiple times.

If I ever go again, I'll try something else from the many items available on the menu.

I didn't expect to see Tony Bourdain there, figuring he probably doesn't cook much these days. I'll upload a pic of the restaurant's exterior soon.

I loved that they included the shot to GW Bush in the show as I had read it in a quote in another article about bourdain. kudos to the travel channel and to anthony!

Yes, really!

He was filming an episode of No Reservations when the recent shit hit the fan. The airport and bridges got bombed so he can't get out!

He posted on the Travel Channel forums:

"Thanks for the good thoughts and well wishes. We are all of us (Diane, Jerry, Toddles, Tracey and me) in good health, good spirits and working ferociously on our tans and sipping blender drinks while watching the fireworks from a secure location. Our masters at Travel Channel have made sure we are being well looked after.
Though I'm not sure the "gold-plated, monkey-navigated rocket-sled" I requested as an exfiltration vehicle will be laid on imminently...we have nothing to complain about.
Particularly compared to the locals who are having an atrocious time of it. This is a great city--filled with many lovely, proud and generous people and it's heartbreaking missing so much of it. Worse seeing all that pride and hope and tolerance turn overnight to grim resignation. Hope to return to shoot here someday and finish what we started."

I hope he makes it back ok!

I just picked up Tony's new book, "The Nasty Bits" which appears to be a compilation of mostly previously published magazine articles.

The book's preface is a literal version of the Hudson Bay seal hunting and raw seal eating experience as depicted on the Quebec episode of No Reservations.

I thought we'd get to see him actually shoot a reindeer, but instead we saw some lousy slapstick of his producer running away and getting gunned down a la Fargo???

New sitcom on Fox: Kitchen Confidential

Fox announced their Fall 2005 line up and I was surprised to find this!....

Kitchen Confidential

Based on renowned chef Anthony Bourdain’s best-selling autobiography, KITCHEN CONFIDENTIAL explores the deliciously crazy world of upscale restaurants. Chef JACK BOURDAIN (Bradley Cooper, “Alias,” “I Want to Marry Ryan Banks”) found enormous success at a young age, but his culinary genius also led to a lifestyle of boozing, womanizing and drugs. After hitting rock bottom and deciding to sober up, the only job he could get was slopping soggy pasta for the masses at a tacky opera-themed restaurant. Out of the blue, Jack is offered an opportunity to get back in the game as head chef at a top New York restaurant. There’s just one problem: the owner gives Jack a mere 48 hours to fully staff his kitchen and prepare to dazzle over 300 customers – including the food critic for the New York Times (who also happens to be a jilted ex). Jack hastily assembles a renegade crew of colleagues from his past, including chefs STEVEN DAEDALUS (Owain Yeoman, “Troy”), SETH KLEIN (Nicholas Brendon, “Buffy the Vampire Slayer”) and TEDDY WONG (John Cho, “Harold & Kumar”). Also along for the ride are TANYA (Jaime King, “White Chicks,” “ Pearl Harbor ”) the hostess, a rookie pastry chef named JIM (John F. Daley, “Freaks and Geeks”), and the owner’s daughter, the gorgeous MIMI (Bonnie Somerville, “NYPD Blue”), who can’t wait for Jack to fail. In KITCHEN CONFIDENTIAL, executive producers Darren Star (“Sex and the City”) and David Hemingson (“Just Shoot Me,” AMERICAN DAD) expose the secrets of the restaurant business through the delectable story of a talented chef who’s determined to climb back to the top of the food game.

That was probably one of the most interesting episodes I've seen.

Visit to the foie gras facility, eating the 16 course foie gras dinner, and then the whole seal hunt and family chowdown on the bloody raw seal flesh, was fascinating.

Makes me want to go visit Montreal!!! Almost... (if only they still had major league baseball)

I've been looking into the messages on the past "trading cooks tour" thread and was not able to d/l any of the episodes online. Does anyone by chance have them to trade for blank media?

After rewatching No Resevations...The Jersey episode, my daughter and myself are both craving "rippers" which we have never tried before. Afterr several failed attempts we are seeking some advice.
How long do you cook the dogs, and at what temperature? What type of dog is best? Any help is appreciated.

Hey ya'll! When I got to meet Tony for the book signing, he mentioned that he has been working on a series for the Travel Channel, much like A Cook's Tour and it would be airing in April, I think!! YAY!

I asked him if he thought Food tv would put ACT out on DVD and he laughed and said that they were bastards and wouldn't do that at all cuz they don't think they'd make money off of it...then he kept laughing and said that maybe if his series on the Travel Channel did well, Foodtv would look at his other series as a way to make money and maybe THEN they would release it on dvd.

He was really, really nice and so freaking funny! I didn't get any pics, but I did get my cook book signed. I look forward to seeing him the next time he is out.

So I couldn't sleep last night, due to too much coffee and I was up and watching telly at 1am...and guess what was on?! Cook's Tour was on Food Network - it was the one where he goes to Vietnam and meets up with his French buddy. Very cool. I could watch those shows over and over...so keep your eye open! I am dying to see the Mexico one where he eats iguana. Definitely my favorite.

I just returned from a trip to Singapore, which was loosely inspired by the Singapore episode of "A Cook's Tour." The food in Singapore is awesome and I would highly recommend any foodies to visit there. Hawker centres rule!

Anyways, now I'm wondering how many of you have ever visited any of the eating establishments which Tony visited on "A Cook's Tour."

I have the added benefit of living in San Francisco...

Here's my list of places I've eaten where Tony ate on the show:

- Sin Huat Eating House, Singapore (I'll post a few pics soon)
- Tekka Centre hawker center, Singapore (I ate murtabak, but probably not the exact same hawker stall)
- Swan Oyster Depot, San Francisco
- French Laundry, Yountville

I'll try to hit Imperial Herbal restaurant and the Malay place next time I'm in Singapore... =)

Hi there,

I am new to the tribe and very happy to find it as I am a huge fan of Tony Bourdain.

Just last week I found out that Food Network here has stopped running the show and I was so pissed.

I just saw other postings and there is one that has a link to download the shows and i can't wait to get home and do that.

Thanks guys and hope to see more of Tony on TV.

A Cooks Tour is my favorite show, I have been taping(VHS) and Tivo(ing) it. I need 7 or 8 episodes to make my collection complete. if anyone is interested in trading episodes let me know. I DO NOT sell them, don't even ask. I am just interested in having them all for my personal viewing pleasure.
